Tax is excluded from the example so the arithmetic is visible; on a real order it is collected on the food and passed through to you. Card processing is Stripe’s standard rate and varies slightly by card — Hatch does not mark it up.
A percentage punishes you for selling something expensive. The work Hatch does is the same whether the basket is nine dollars or two hundred, so the price is the same. A caterer and a coffee window pay identically.
